Sebastian Ramirez is a fourth generation coffee farmer, having grown coffee for nearly twenty years. A modern and progressive farmer Sebastian has been looking to improve the quality of his coffee alongside supporting other partner producers to do likewise. This community approach includes free consultancy to coffee producers from whom Sebastian purchases coffee cherries.

Process

Step 1. The cherries undergo anaerobic fermentation in 200 litre tanks for 120 hours, at a constant temperature of 18C, with controlled CO2 injection to create an oxygen-free environment, enhancing the flavours.

Step 2. After pulping the coffee goes through a second fermentation phase for another 120 hours. During this phase the beans are submerged in water and undergo a thermal shock at 40C, enriched with wild berries. This thermal shock technique helps lock in unique flavour from the berries, adding more complexity to the coffee's profile.

Drying Phase 1. The coffee is then dried, under a canopy, at 40C and a humidity of 25% for around 20 days. This slow and controlled drying process helps retain the coffee's aromatic properties.

Drying Phase 2. Additional drying occurs in a parabolic dryer for approximately 5 days. This stage is also controlled with shade cloth to prevent over-drying and ensure a uniform moisture level.

Stabilisation. Once drying is complete the coffee is packed into Grain-Pro bags and allowed to stabilise for 15 days; this period helps the beans reach a balanced moisture state, enhancing and prolonging flavour consistency.

Hulling and Manual Selection. Finally the coffee is hulled to remove the parchment layer before being manually selected to ensure quality. The selected beans are then vacuum-packed to preserve freshness all the way to their final destination.

This is an experience coffee, in the truest sense, and one you won't forget quickly - big raspberry and cherry aromas persist from grinding through to the final cup, with florals being provided by violet and rose alongside a healthy dose of confectionary sweetness making every cup feel almost dessert-like.
